From the vibrant coffee scene of Melbourne to the world-class cocktail culture of Sydney’s Maybe Sammy — ranked among The World’s 50 Best Bars — Giorgio has built his career around one idea: that hospitality is more than service; it’s a craft. A conversation. An experience worth remembering.

After years of creating menus, training teams, and developing beverage programs for some of the most celebrated bars in the world, Giorgio founded Straight Up Bar Services in New York City to share that knowledge with venues ready to evolve. His goal is simple — to help operators design spaces and systems that feel as good to work in as they do to drink in.

Drawing on international experience and a meticulous eye for detail, Giorgio brings both creative vision and operational discipline to every project. Whether it’s a new opening, a rebrand, or a staff training program, his approach blends storytelling, structure, and soul — all served Straight Up.
